Good things come in small packages. A meal in a bowl is the perfect option for a quick lunch or even a takeaway if you are constantly travelling like me, especially in this weather.
From pan recipes to one bowl meals – convenience is what matters and that’s exactly why most of us are looking for today. More so for me eating a small meal in my favorite bowl brings me happiness. Today I am sharing 2 of my repeatedly made and easy to build and eat recipes because I love Meals In A Bowl.
1. Smashed Roasted Potatoes
What will you need-
2 big size potatoes
1/4 cup extra-virgin olive oil
1 1/4 teaspoons ground cumin
1/2 teaspoon ground toasted fennel seeds
1/4 teaspoon paprika
1/8 teaspoon pepper
Salt to taste
Preparation –
a. Preheat oven to 350°. Wrap each potato individually in foil (without peeling them). Now bake until they become tender.
b. Now unwrap them and place them on a baking sheet – but press gently to make them look flat without breaking them.
c. Now apply some oil on them and sprinkle salt and pepper.
d. Preheat oven to 500°. Roast potatoes for 15 minutes and continue roasting until crispy and golden brown, 25–30 minutes. And we are ready!
2. Crispy Spiced Chickpeas
What will you need-
100-200 grams of chickpea (depending on how much you want to make)
1/4 cup extra-virgin olive oil
1 1/4 teaspoons ground cumin
1/2 teaspoon ground toasted fennel seeds
1/4 teaspoon paprika
1/8 teaspoon pepper
Salt to taste
Preparation –
a. Preheat oven to 450°.
b. Toss chickpeas in a bowl with oil and next 4 ingredients to coat.
c. Season with salt and transfer to a baking sheet.
d. Roast, stirring halfway through cooking, until crispy for 25–30 minutes.
